In 1995, we came to Québec from Belgium on a one-year sabbatical leave; when we arrived on Île d'Orléans, it was love at first sight, and we have been here ever since. The estate, along with the orchard and its 4000 neglected apple trees, was purchased in 1997. The decision was then made to manage the orchard using the organic farming approach for apple-processing purposes, which has led to the production of various ciders (one of which is an ice cider), cider vinegar and other varieties of aromatized vinegars, as well as mustards and various other food items such as jellies, preserves, and "confit" products. |
